Chocolate Orange Biscotti

Chocolate and Orange are one of those partnerships that everyone celebrates! Hearing something has chocolate and orange in it always makes me say “mmmmmmmmmmmmm”!

I like to layer the orange flavoring by using Grand Marnier and the zest from a large orange. It is the perfect compliment to the rich chocolate and then I love the crunch from the almonds. Have I mentioned before how much I love biscotti?! lol

Recipe

Chocolate Orange Biscotti

  • 2 cups flour

  • 3/4 cups cocoa powder

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 4 XL eggs

  • 1 cup sugar

  • 1 teaspoon vanilla extract

  • 1 Tablespoon Grand Manier

  • 1 cup whole almonds with skin, lightly toasted, cooled, and then coarsely chopped

  • 3/4 cups chocolate chips

  • zest from one large orange

Directions

  1. Preheat oven to 350 degrees.

  2. Pour almonds in single layer on a cookie sheet and bake for about 5-6 minutes until lightly toasted. Take out when done, cool and coarsely chop.

  3. In a large bowl (I use my Kitchen Aid mixer with paddle attachment), beat the eggs, sugar, vanilla extract and Grand Marnier for a couple of minutes at medium speed.

  4. Add your dry ingredients and mix slow so it doesn’t go everywhere. Then increase speed to medium until just blended. Then add in your chocolate chips, chopped almonds and orange zest and mix a few more rounds to just incorporate everything.

  5. Line a large cookie sheet with parchment paper. Split dough into two, and form two long logs. Place on parchment lined cookie sheet and cook for 25 minutes.

  6. When done, take out and let rest for 15 minutes. Then, with a serrated knife, cut each log into roughly 1 in slices on the diagonal and put back on the cookie sheet upright to bake again.

  7. Cook for another 15 minutes and then take out of the oven to cool. Enjoy!!!
