Oven Roasted Broccoli
This will be one of the easiest recipes I ever post and it is so healthy and delicious! I am always looking for ways to get more greens into my diet and this is one of my favorite ways to make broccoli. Even folks that don’t like broccoli usually like it better cooked this way. They’re roasted, crunchy, and oh so flavorful!! It’s all about the lemon baby! Ok, let’s get to it!
Recipe
Oven Roasted Broccoli
1 or 2 large heads of fresh broccoli
Olive oil
Generous pinch of kosher salt
Generous pinch of cracked black pepper
juice from 1 large lemon
Preheat oven to 350 degrees.
Cut the bottom portion of the thick broccoli stem and then cut apart each bundle so there all the broccoli florets are detached. Place on ungreased cookie sheet.
Drizzle olive oil over all the broccoli florets. Sprinkle generous pinch of salt and pepper over all the florets as well.
Next juice the lemon directly over the broccoli florets.
With clean hands, toss everything right on the cookie sheet so you are coating all the florets and then spread them out evenly on the pan.
Cook in oven for 20-30 minutes until broccoli is bright green and edges slightly start to get golden.
Take out of oven and serve immediately!
