Roberto's Chicken Lazone
Chicken Lazone is a fancy shmancy name for chicken in cream sauce. I always love it when someone says I’m saucy so why not make a dish that is as saucy as I am?! I love my version because I added some extra veggies and some cajun flair! This is a great weeknight meal with a punch of flavor! I’m watching my love handles but if you aren’t then add a loaf of some crusty bread to sop up the delicious sauce! I recommend a bold yet smooth cabernet or pinot with this one! The flavors can’t be beat and the macros are pretty good too with the protein, veggies and carb ratio (shhh, I don’t want to hear otherwise!). Enjoy Friends!!!

Roberto’s Chicken Lazone
1 and 1/2 lb chicken breast (either 4 thin sliced or cut two large in half horizontally)
1/2 teaspoon garlic powder
1 teaspoon Cajun seasoning
1/4 cup AP flour
1 Tablespoon butter
1 Tablespoon Olive Oil
1 large head broccoli (steamed or oven roasted -I prefer oven roasted)
1 large onion cut into 1/2 inch slices
1/2 lb cooked Farfalle pasta cooked al dente
Lazone Sauce
1 Tablespoon butter
1 1/4 cup half and half
1 1/2 Tablespoon Cajun Seasoning
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon Italian Seasoning
1/2 teaspoon onion powder
1 teaspoon smoked paprika
2 teaspoons roughly chopped italian flat leaf parsley
Mix together the cajun spice and garlic powder and sprinkle over both sides of the chicken cutlets. Then dredge in the flour and shake off excess. Place coated chicken on a plate. Prepare your broccoli as preferred (steamed or oven roasted).
Boil water for your pasta and prepare to al dente (about 10 minutes).
In the meantime, melt your butter and olive oil in a large cast iron skillet until hot and melted over medium flame. Next, cook your chicken about 5 minutes on either side until golden brown and cooked through. Remove from pan and put on plate to rest.
Add the additional Tablespoon of butter to the pan and melt. Mix all the remaining spices together and set aside. Add the sliced onion to the hot pan and cook the onions until soft and almost caramelized (5-8 minutes). Next, add the half and half to the pan and stir and scrape the bottom to loosen up all the flavor crystals! Add the half and half and seasoning mix and stir well to blend.
Add your pasta to the sauce and stir well. Add in your broccoli and stir again. Now, shimmy in the chicken breasts so they are in with the rest of the pool marinating in the delicious jacuzzi of cajun flavors and reduce heat to low flame.
Let everything simmer away for about 3-5 minutes on low heat and then add your fresh chopped parsley and serve! I hope you go as crazy for this as we did! Enjoy Friends!
