SKBF Stew

No, this isn’t a new boy band like NKOTB…this is SKBF Stew which stands for Sausage, Kale, Bean and Farro stew and it is DELICIOUS!!! I am all about layers of flavor and all about texture and this stew checks all the boxes! I love the tomatoey (yes I made up that word) goodness of the stock, the depth of flavor from the sausage and the chew of the farro..mmmmmmm. I paired it with some homemade garlic bread and some vino and it was a warm and soul satisfying dinner! Just add a fire in the fireplace and something great on Netflix and this equates to a perfect night at home! Enjoy!!


Recipe

SKBF Stew

  • 1 lb ground sausage (sweet if you like it mild or hot if you like it spicy)

  • 2 Tbsp Olive Oil

  • 2 Carrots roughly chopped into small 1” chunks

  • 2 stalks celery roughly chopped into small 1” chunks

  • 1 large onion, medium diced

  • 4 cloves garlic, finely minced

  • 2 qts unsalted Chicken STOCK

  • 1 Tablespoon kosher salt

  • Pinch of black pepper

  • 1 14.5 oz can diced tomatoes

  • 1 cup farro

  • 1 teaspoon Italian Seasoning

  • 1 large bay leaf (or 2 small)

  • 4 cups chopped kale (ribs removed)

  • 1 15 oz cannellini beans, drained and rinsed

  • OPTIONAL-grated parmesan cheese for garnis

  1. In a large dutch oven, add olive oil and sausage and cook over medium high heat until sausage is broken up and browned. Remove sausage into small bowl and place in refrigerator until later.

  2. Add your chopped carrots, celery and onion and stir around the pot to coat with the sausage renderings and oil. Add a bit more oil if too dry. Cook for 3 minutes. Add the chopped garlic, stir and cook for another minute.

  3. Add the chicken stock, farro, salt and pepper, canned tomatoes, Italian seasoning, and bay leaf and stir well.

  4. Bring to boil and then lower heat to just below medium and cover and simmer for 20 minutes.

  5. Remove bay leaf, add back the cooked sausage and the chopped kale. Stir well and cook for an additional 10 minutes uncovered.

  6. Add the beans, stir and cook for an additional minute or two.

  7. Serve right away and garnish with grated parm if desired and some yummy crunchy bread (great for dipping).
