Summer Rice Salad

This is my go to salad I make almost every time I grill, and certainly a must whenever it is a summer BBQ. It is so quick to make and so yummy! It is very fresh and tasty and the colors are so vibrant it stands out on the table when you serve it and, promise me, there will be none left! Enjoy!

Summer Rice Salad

  • 1 small purple onion, peeled and chopped

  • 3-4 roma or vine cocktail tomatoes, chopped

  • 1 15 oz can crisp corn, drained

  • 3/4 cup favorite Italian Dressing (I love Paul Newman’s)

  • 1 1/2 cup cooked rice (or 1 packet microwave rice packet-I love the quinoa rice packs from Costco)

  • 1 orange pepper, diced

  • 1 yellow pepper, diced

  • Italian flat leaf parsley, finely chopped

  • generous pinch salt and pepper

  1. Drain corn and add to a medium sized bowl.

  2. Cook rice and add to the bowl of corn.

  3. Chop all your veggies and add to the bowl.

  4. Give one or two stirs to mix everything up. Then add the salad dressing, the generous pinch of salt and pepper, and finally the chopped parsley and mix well.

  5. Cover the bowl with plastic wrap and refrigerate for at least one hour.

  6. You can serve this cold or at room temperature. Make sure to give it one final mix before serving. Enjoy!
